I am an ultimate Pinterest addict. Most of my time is spent pinning home styling ideas as well as recipes. This year, I am going to make an effort with my attempts in the kitchen, dishing up better, healthier meals for my family. We have introduced Meatless Mondays into our home and this was our first go at a vegetarian dinner.
You can find the recipe for the tart here. Do note that I switched out the blue cheese for goat's cheese and used low fat cream cheese for the filling. I also did one big tart (served 4) instead of 6 individual little tarts. I had my in laws over and we devoured it with an easy spinach and tomato salad with a bit of balsamic dressing. It was divine and has given me the encouragement I need to continue this series.
